Now owned by the Bollinger family, Ayala, once one of the biggest Champagne brands, is experiencing a resurgence. The Brut Majeur is a blend of 40% Chardonnay, 40% Pinot Noir and 20% Pinot Meunier. A dry, fresh and elegant sparkling wine that pairs especially well with shellfish or poultry.
