Chateau de la Grave Caractere: The grapes come from the vineyards’ sloped lots of 30 to 50-year old vines. After undergoing individual maceration and fermentation, a traditional Côtes-de-Bourg blend of 80% Merlot and 20& Cabernet Sauvignon is aged for 12 months in large French oak barrels to add complexity and round out the wine’s ripe tannins. The result is an intense nose of big red berries, blackberries, blueberries, undertones of spice and discreet notes of tobacco.

For eight centuries, small village dairies called fruitières have pooled milk from local family farms, ensuring even the smallest producer has a stake in this legendary wheel. It takes roughly 400 litres of milk, the daily output of 20 Montbéliarde cows, to craft a single 40kg wheel. With over 1.6 million wheels produced annually, it remains a triumph of artisanal solidarity. While younger Comté is supple and milky, this 24-month maturation has undergone quite the transformation. The texture is now dense and flaky, punctuated by crunchy tyrosine crystals. The flavour profile has deepened from sweet, cooked milk into a symphony of roasted walnuts, toasted brioche, and caramelised onions.
