Paillot de Chèvre: Goat | Pasteurized | Soft | Surface-Ripened
Historically, natural straw was used to support the fragile, elongated goat cheese logs typical of the Loire Valley. Today, this legacy is captured in Paillot (meaning “straw”) de Chèvre’s scalloped exterior, the result of each log being secured by straws along its length during aging and transport. Its fluffy, bloomed rind ripens the cheese from the outside in, creating a signature texture that transitions from a supple creamline just beneath the rind to a fudgy and delicately crumbly center. It offers wonderful lactic and caprine notes, with hits of hazelnut and fresh cream.
