The other white grape from Cote de Beaune (Chardonnay is dominate of course) that wine geeks adore. Arnaud Baillot produces limited-edition, small-batch Burgundy crus from their estate. A bright and mineral-driven white with notes of lemon, grapefruit, green apple and hints of florals. Crisp and lively with incredible balanced natural acidity.

Pairings: asparagus and goat cheese, feta and citrus salads, fresh seafood, tempura, fried calamari
