De Martino Estate Cabernet Sauvignon from Maipo Valley is a balanced, medium to full-bodied red offering aromas of ripe blackcurrant, dark cherry, and hints of cedar. It’s dry with supple tannins and vibrant acidity. Serve it slightly below room temperature with grilled flank steak as the wine’s fresh fruit character and polished structure will enhance the meat’s savory char beautifully, or pair it with aged cheddar cheese where the wine’s concentrated flavors and smooth finish will complement the cheese’s sharp, nutty notes perfectly. Winemaker Nicolás Pérez, who blends tradition with innovation, crafts this wine from grapes grown on the estate’s Isla de Maipo vineyards where deep gravel soils create ideal conditions for Cabernet Sauvignon, fermented using indigenous yeasts before aging for nine months in French oak barrels and concrete tanks. Founded in 1934, De Martino became the first Chilean winery to label and export a Carmenère in 1996 and pioneered work with century-old vineyards in the Itata Valley, and today the fourth generation—brothers Marco and Sebastián De Martino—lead Chile’s second-largest certified organic vineyard operation.
