Masse fermented their Aligoté—sourced from some of the estate’s oldest vines—in a mixture of stainless-steel tanks, to preserve brightness and fresh fruit, and texture-enhancing barrels. The wine then spent 10 months aging, developing complexity and nuance, before it was bottled. The result: a perfectly crafted example of the grape.
