Gallina de Piel is a project from David Seijas, the former sommelier for many years at the famed El Bulli restaurant in Spain (ranked as the best restaurant in the world for many years). This is a non-alcoholic white that is inspired by the aromas of Albariño, and that uses in part a new state of the art process developed to remove alcohol from wine while retaining as much of the aroma and flavour as possible. This uses dealcoholized wine along with a wild list of ingredients to help to capture those flavours.
