Vineyard:
the vineyard used for the production of Cerasuolo di Vittoria in
“classic” typology is exclusively Vigna Stidda.
Vineyard management:
traditional, organic, non-irrigated

450 m. above sea level.
Climate:
temperate Mediterranean
Ground:
calcareous – clayey.
Grape varieties:
Nero d’Avola 70%, and Frappato di Vittoria 30%, selected and replanted by the company. Gulfi, cultivated as a sapling supported on espalier.
Planting density:
8,300 vines/ha
Yield per Ha:
does not exceed 5 quintals
Winemaking:
the Nero d’Avola and Frappato grapes, in the indicated percentage, harvested in the first days of October, are vinified together
with a maceration on the skins for approximately 1 week.
Maturation:
after malolactic fermentation, the wine is decanted into small 500 euro barrels
225 liters of multiple passes, where it remains for approximately a year.
Refinement:
in the bottle for a few months. It was put on the market after
March 31st of the second year following the harvest
Color: cherry red with garnet shades.
Smell: red fruit, morello cherry with floral nuances.
Taste: full, harmonious, elegant.
Serving temperature: 15-18°C.
Food pairings: goes excellently with meats
white, tuna and elaborate fish dishes.
Storage method: bottle laid down in a cool environment at a constant temperature not exceeding 18°C.
