, i.e. marl of Eocene origin (Cormons flysch)

Tasting notes
delicate and characteristic bouquet (clear hint of almond, lighter hints of wild flowers). Dry, slightly aromatic flavor on an elegant bitter almond background, with hints of elderberry.

Gastronomy
lean appetizers, fish dishes (sea and freshwater) both stewed and in sauce. Regional cuisine dishes.
