Grapes: 80% chardonnay – 15% pinot noir – 5% gamay
Place: Fleurie, Beaujolais, France
Elegant aromas of citrus, apple, ripe pear, almond, hazelnut and white flowers (from the Chardonnay). Dry, a dosage of 6 g/L of sugar added at disgorgement, producing a creamy sparkle. Notes of red berries such as raspberry and red currant are drawn out thanks to 15% of pinot noir. A savory, balanced finish. Methode traditional (like Champagne) spending 12 months on the lees.
Pairing: aperitif, serve it pure or as a Kir Royal by adding a few drops of black currant, blackberry, or raspberry liqueur, very food friendly.
