Place: Languedoc, France
Françoise Le Calvez comes from 12 generations of vignerons. She turned, along with her husband Pascal Frissant and her children, small inheritance of vineyards and a winery into a medium sized, certified organic and practicing biodynamic estate with a solar powered winery and bottling line. No oak, notes of tapenade, garrigue, brambles, cherry, five spice and magnolia with medium velvety tannins and brisk acidity.
Pairings: Grilled pork or lamb would do nicely.
