About: This wine is made from Garnacha, Syrah, and Monastrell grown in sandy clay and whitelimestone. The 23-35-year-old vines thrive in the hot arid climate. The grapes are mostlydestemmed and undergo fermentation in stainless steel tanks. After a modest period on skins, thewine is pressed off into concrete tanks for a short settling and ageing period. The wine is lightlyfiltered before bottling.
Taste: This wine is a medium ruby in the glass. The nose is plush and cuddly with squishy aromasof ripe strawberry, mashed raspberry, rooibos tea, sweet rose, pink peppercorns and candied sage.The palate is equally pleasant and docile with rather low tannins, moderate acidity, and a creamy texture seldom found in red wines other than Grenache. Further flavours of rosemary, red plumflesh, hot lips, and cornflower finish off the palate.
How to Drink: As you may have heard from our podcast, this wine is quite pairable, especially ifyou have a meat heavy diet. I’d suggest pairing this with roasted pork loin embellished with classicSpanish flavours like sweet paprika, olives, and sofrito; You can’t really go wrong. Alternatively,you can make a Coca. It’s basically an ancient pizza-like pastry from this area of Spain. Top it withSobrassada, a local cured sausage, if you really want a treat.
