Notes of mature fruits such as peach and citrus fruit laced with honey. A touch of acacia blossom and herbs lend a delicate intricacy. The palate is rich and plump — ending with hints of vanilla and sweet almond creaminess. Minerality and acidity lend a fine, balanced complexity to the voluptuous finish. Outstanding complexity from aging in large 30 hl casks made of Allier oak. The wine is then left in casks to mature for 10 months. Drink now or hold for a decade.
Pairings: shellfish, fish dishes such as red tuna or seabass. Ideal served with quiche, seafood risotto and with roasts
