Sobrecasa Rosado Clásico is a natural wine made mainly from Tempranillo and other varieties in small percentages (Grenache, Muscatel, Verdejo, Palomino). All the grapes come from a single 4-hectare vineyard called Sobrecasa, located in Cigales. It was planted more than 80 years ago at 750 metres of altitude on soils with alluvial gravel (cascajos).
Harvesting is carried out manually, selecting the grapes in the vineyard and in the winery, on a selection table. Once the grapes are destemmed and crushed by direct pressing, they ferment in stainless steel deposits with native yeasts at a controlled temperature, between 15 and 20ºC. Once the fermentation has ended, the wine is left to stand for 8 months in 2000-litre chestnut wood barrels. It is not clarified or filtered.
