Brenot’s traditional methods includes hand-harvesting, tilling of soil with horses, traditional vinification (natural yeasts) and aging in their 200 year old cellars They combine this with modern know-how including their own laboratory for testing and two oenologists on staff. The Brenot Chablis is aged only in temperature controlled stainless steel tanks.
