Grapes: 60% Syrah, 25% Tibouren and 15% Grenache
Place: Provence, France
Owned by the Roux family since 1797, the property of Clos Cibonne saw its winery modernized in 1930. Brigitte Roux (André’s granddaughter) took over in the ‘90s, and along with her husband, Claude Deforges, and 5th generation winemaker Olivier Deforges, brought Clos Cibonne back to its standing as one of the 18 Cru Classés in Côtes de Provence. Producing traditional wines from the rare Tibouren grape variety in small numbers, these wines are keenly sought out the world round.
Complex, dense and structured with lovely peppery, black cherry and blackberry fruit, modern and dense with a grippy, cedary edge (1/3 new oak) to the ripe black fruits.
Pairing: ratatouille, grilled meats, cheese platter, aperitif
