Chenin Blanc – 100%
TASTING NOTE
This wine bursts with stone fruit flavours, dominated by apricot, peach, and
pear, complemented by evolved barrel-influenced aromas such as cream,
vanilla, toffee, and caramel. Notes of orange marmalade and lemon blossom
arise from the skin-fermented portion. The palate delivers an ethereal
mouthfeel, initially weighty and full, ending with a beautiful mineral salinity
that is light and vibrant. With its exceptional potential for ageing, this wine
promises a complex and gratifying evolution over time.
WINEMAKING
After cooling the grapes, one-third were pressed as whole clusters, while the
rest underwent destemming and crushing into bins, followed by additional
cold soaking in a cool room. After seven days at 10°C, half of the initially
crushed volume was pressed, constituting another third. The remaining third
underwent fermentation in bins on the skins until dry, with daily
punch-downs for concentrated flavour extraction. After a complete
fermentation, the wine stayed on the skins for an additional 5 days. The
separately fermented portions were blended and matured in neutral barrels
for 8 months. This meticulous process ensures a nuanced and well-rounded
final product.
