TASTING NOTE
This wine exhibits a nuanced reductiveness on the nose, reminiscent of wet
river rocks and flint rather than unpleasant odours. Initially slightly dusty, it
evolves to reveal enticing aromas of chamomile, elderflower, and jasmine
perfume, complemented by fine citrus blossom sweetness, hints of vanilla,
and freshly ground cinnamon. The palate impresses with its weight,
enhanced by subtle tannins from extended skin contact, allowing the elegant
flavours to flourish. The overall experience is one of full, rounded sweetness,
achieving a harmonious balance. The ethereal finish is described as the wine
gracefully disappearing yet lingering with a delightful weight, akin to the
sensation of enjoying candy floss. This cerebral and enjoyable wine
epitomises balance and elegance.

WINEMAKING
After a light crush, the mash spent 4 days in a cold soak for flavour
extraction. Natural fermentation proceeded for 3 days on the skins before
pressing. Fermentation concluded naturally in 225L and 500L neutral white
wine barrels. Maturation lasted 5 months with monthly battonage. The wine
was neither fined nor filtered, then racked and bottled .
