PAVETTE CABERNET SAUVIGNON

95% Cabernet Sauvignon, Malbec, Petit Verdot

Whole berry primary fermentation followed by aging in French & American oak barrels & foudre for 12 months. It shows a classic California Cabernet style with a left-bank-Bordeaux influence. Boysenberry, blackberry, and cassis flavours with a tinge of anise pastis. It’s medium bodied and generous yet still firm.

Pairing: cheddar or gorgonzola, Venison, meat stews, chili
